Tapas Tasting Sampler Platter
Try this tasty tapas recipe with Tapeña Tempranillo.
Prepared items to be bought:
Wedge of Manchego or Iberico cheese
4 ounces of Serrano ham, Jamon or prosciutto
Mixed marinated olives like Manzanilla, or Arbequina
Sliced rounds of chorizo
A small block or jar of Quince paste
A jar of roasted peppers
A fresh loaf of fruited nut bread
Items to make ahead:
Hard boiled eggs
Marinated zucchini (recipe follows)
Thinly slice the cheese, and quince paste (if using block style).
Thinly slice the bread and cut into small serving size pieces.
The roasted peppers should be gently torn into strips.
The ham should be gently folded into rounds.
Slice the eggs.
Artfully arrange the items on a large platter mixing savory and sweet items next to each other.
2 medium zucchini
1 tsp salt
1 Tbsp sherry vinegar
1 tsp lemon juice
5 peppercorns, crushed
1 Tbsp of mint, minced
Cut zucchini into 1/4" slices in a sharp diagonal shape. Lay them on a stack of three paper towels and cover them with salt. Press three more paper towels on top of them and place them between 2 plates. Let them rest for 20 minutes, the paper towels will be moist.
Still between the plates, microwave them on high for 5 - 6 minutes, uncover and remove to a non-reactive container.
Whisk vinegar, lemon juice, peppercorns and mint.
When zucchini has cooled, cover with the marinade and refrigerate for at least 30 minutes.
