White Bean Tomato Dip
Try this tasty tapas recipe with Tapeña Verdejo.
Makes about 2 cups of dip
1 (14 ounce) can Northern White Beans, rinsed and drained
1/3 cup vegetable broth
1 clove garlic minced
1/4 cup sliced sun-dried tomatoes
3 Tbsp virgin olive oil
1 tsp minced parsley
1) Heat the broth in the microwave until almost boiling, about 1 minute.
2) Put garlic and dried tomatoes into the hot broth to cook the garlic and reconstitute the tomatoes.
3) Put all ingredients together into a food processor and blend until smooth.
4) Serve with grilled bread, sliced vegetables, or bread sticks.
